hot cross custard tart
Will the Easter bunny be coming to your house this weekend?! Do you have any special Easter traditions that you do or do you make anything special each Easter? The past few years I have made this yummy hot cross custard tart. Maybe you would like to try? It's very simple and yummy too!
First off I have here an easy recipe for a sweet shortcrust pastry or you could buy some if you'd prefer too.
Sweet Shortcrust Pastry:
125g unsalted butter chopped up
1 1/2 cups plain flour
1/4 cup icing sugar
1-2 tablespoons icy water
*Pop flour, butter, sugar and water into a food processor until the dough resembles breadcrumbs.
*Roll the dough into a disc shape and wrap with cling-wrap. Pop into the fridge for 20 mins.
*Roll the pastry out between 2 sheets of baking paper to a 5mm thickness.
*Place the pastry into a pie dish , trim the excess and and pierce the base with a fork. Cover with a large sheet of foil pushed into the pastry shell.
*Bake for 15 mins at 190 degrees Celsius. Remove foil and bake for a further 10 mins or until crisp and golden.
Now for the custard part...
Hot Cross Custard Tart
1 sheet of short crust pastry if your buying store bought pastry
1/2 cup milk
1/2 cup pouring cream
1 egg
1 egg yolk
1/4 cup white sugar
3/4 teaspoon vanilla extract
1 teaspoon nutmeg
1 teaspoon cinnamon
*Place milk and cream into a saucepan over a low heat and bring to the boil then remove.
*Whisk egg, egg yolk, sugar and vanilla then pour into the milk mixture. Mix to combine.
*Pour the mixture into the cooled pastry tart shell and bake at 150 degrees Celsius for 25 mins or until filing is set.
*Combine nutmeg and cinnamon. Place the handles of 2 wooden spoons over the tart to make a cross shape, dust mixture over and remove spoons.
